The NFS server is not on the 'central office' gateway machine.
That's not where the problem lies.

I'm talking about the NFS client, the thing that is issueing the 'mount'
command. The NFS client is on a laptop which needs secure access.
Ergo, there is a firewall and a freeswan gateway on the laptop.
That's why I want the laptop to present itself to the internal network
with its internal address, and not the default route.

I don't want to change the default route on the laptop, since the laptop
user has other legitimate needs to access the exterior world, and I
don't have the bandwidth to handle that traffic over the internal network.
(OK, I do, for one laptop. But I'm goin to have to deal with dozens
or more).
